Crunchy Baked Bananas Back to Home

These crunchy bananas will give an entirely new perspective to the usual “mushy” bananas that your kids are used to. Once your kids start munching on this healthy dessert, they become mischievous little monkeys who want to be fed bananas all throughout the day!

Crunchy Baked Bananas
Makes 8 pieces

Ingredients
4 slightly green bananas, peeled and cut in half lengthwise
2 cups crushed corn flake cereal
1 teaspoon ground cinnamon
2-3 tablespoons honey
Optional garnish
Frozen vanilla yogurt
Assorted fresh berries
¼ cup powdered sugar

Let’s get rolling!

Preheat oven to 350 degrees F. Line a sheet pan with foil, spray with cooking spray and set aside.

1. Pour corn cereal and cinnamon into a zip-loc bag and seal shut. Put this into another zip-loc bag, seal shut and crush with you fist. Leave plastic bag sealed and set aside.

2. Place bananas on prepared sheet. With a small spatula or pastry brush, coat each banana half with honey on all sides.

3. With a fork, pick up each banana and put it into the crushed cereal mix. Seal shut and shake to coat. Place cereal-coated banana back onto sheet pan. Continue until all bananas have been coated. Sprinkle any left-over cereal evenly over the tops of the bananas.

4. Bake for 10 minutes and remove from oven. Garnish and serve immediately with frozen yogurt, assorted berries and a sprinkle of powdered sugar.
