Breakfast in My Pocket Back to Home

Tacos move over!  This is a great breakfast idea where children can choose their favorites and build there own special morning treat.  I can think of a few other items that could be added to or substituted in the Ingredient list…I’ll bet you can too!  Ask your children to make a list of other items they would like to include in their breakfast building buffet. 

Breakfast in My Pocket
Makes 8

Ingredients
4 large eggs 
1&1/3 cups fat-free milk 
1 tablespoon all-purpose flour 
1/4 teaspoon salt 
¼ teaspoon sweet paprika 
1 cup shredded reduced-fat cheddar or Monterey Jack cheese 
½ cup red bell pepper, coarsely chopped
½ cup ham or turkey deli meat, sliced into strips
4 whole-wheat pita breads, cut in half

Optional garnish
Diced tomatoes and extra grated cheese

Let’s Start Cooking!

Preheat oven to 350 degrees F. Lightly coat a pie pan with cooking spray and set aside until ready to use.

1. In a medium bowl, whisk together eggs, milk, flour, salt, and paprika until smooth. Stir in cheese, red bell pepper and deli meat of choice. Pour mixture into prepared pie pan.

2. Bake for 30 minutes or until the center is just set. Remove from oven, cool 5-10 minutes and cut into 8 triangles. Serve each slice in a pita half and top with optional garnish.

3. Baked eggs may be cooled, covered and refrigerated then reheated in microwave.
