Today, a lot of us have become really concerned about bringing some proper food into our diet and looking for some recipes that consist of mostly healthy foods, which can be quickly and easily prepared for those of us who have an extremely helter – skelter lifestyles.
1. Homemade tomato salsa
What you need:
8 cups tomatoes chopped finely
8 cups tomatoes, chopped finely
1½ cups onions, coarsely chopped
½ cup green pepper, coarsely chopped
½ cup red pepper, coarsely chopped<
6 -7 cloves garlic, finely chopped
¼ cup coriander, finely chopped
2/3 cup red wine vinegar
1 tablespoon salt
1 teaspoon white (or black) pepper
Put all the above ingredients into a big pot and boil them at medium – high heat. Bring the temperature down to medium once it is boiled. Stir it for about 10 minutes. Then, remove the food from the pot and put them into sterilized jars.
If you want to keep it for a number of days, process it in boiling water for about 10 minutes. If you’re gonna keep it only for a few days, then don’t bother with the processing part.
2. Morning Glory Muffin Recipe
What you need:
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/8 teaspoon allspice
3/4 cup sugar
1 egg
1/2 cup buttermilk
1/4 cup vegetable oil
1/2 teaspoon vanilla
1 - 14 ounce can crushed pineapple, drained
3/4 cup carrots, finely grated
1/2 cup raisins
Preheat oven to 400°F. Get a muffin tray and put a bit of oil into each of 12 muffin cups. Stir the flour along with baking powder, baking soda, salt, spices and sugar in a big bowl. Take the egg and pour it in a medium sized bowl with buttermilk, oil and vanilla. Stir some pineapple into it.
Pour this mixture into the flour mixture and stir them together until they have been combined. Put some carrots and raisin and stir them. Spoon batter them into muffin cups and bake for about fifteen to seventeen minutes.
3. Taco Soup
Ingredients:
1 to 1 1/2 pounds ground beef
1/2 teaspoon garlic, chopped
1 large onion, chopped
1 - 16 ounce can tomatoes
1 - 16 ounce can tomato sauce
1 - 4 ounce can green chillies (optional)
2 cups salsa
1 can kernel corn with juices
1 - 16 ounce can pinto beans
1 - 16 ounce can kidney beans
1 package taco seasoning mix
3 cups water
For garnish:
cheddar cheese, grated
taco chips
sour cream
Brown the ground beef with the onion and the garlic. After you have done so, put the rest of the stuff and let them simmer for an hour. When serving, top it with grated cheddar chips, taco soup and a bit of sour cream. You should be able to get about 8 servings. |
