Acorn Squash with Beef & Potatoes |

Recipe Courtesy: Squash Lovers Cook Book
Ingredients: 1 Acorn Squash, peeled, seeded and cut into 1' pieces 2 lbs Lean beef, cut into 1-1/2' pieces 2 lrg red potatoes, cut into 1-1/2' pieces 1 lrg onion, halved and sliced 1 pkg. mushroom gravy mix 1 can (14.5oz) diced tomatoes, with juice 1/4 tsp. allspice 1/4 tsp. garlic powder 1/4 tsp. peppet 2 bay leaves 1/2 tsp. salt
Directions: Combine all ingredients in a slow cooker. Cover and cook on low for 8-10 hours. Remove bay leaves before serving. Serves 6-8
I don't have a picture, forgot to take one. I served it with brown rice. Everyone liked this including Maddie... I always think it is a plus if Maddie enjoys dinner... Jim has to fend for himself if he doesn't like dinner. sorry babe. It doesn't make good left overs... at least non of us wanted to eat it when we saw it the next day. |
